Instructions
Wash the zucchinis thoroughly, trim the ends, and grate them.
Squeeze out excess moisture from the grated zucchini using a kitchen towel.
In a mixing bowl, combine the drained zucchini, salt, and black pepper. Let it sit for 5-10 minutes.
Add flour, grated Parmesan, egg, garlic powder, onion powder, and herbs to the zucchini mixture. Mix well.
Heat vegetable oil in a skillet over medium heat.
Portion out the zucchini mixture and place in the hot oil, flattening slightly.
Cook for 3-4 minutes on each side until golden brown and crispy.
Transfer cooked fritters to a plate lined with paper towels to absorb excess oil.
Repeat with remaining mixture and serve warm.
