Instructions
Preheat the oven to 350°F (175°C).
Grease a large sheet pan (18x13 inches) with cooking spray or butter, and lightly flour it.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined.
Carefully stir in the boiling water.
Pour the batter into the prepared sheet pan, spreading it evenly.
Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
While the cake is baking, melt the butter in a saucepan over medium heat. Stir in cocoa powder and milk until smooth.
Remove from heat and whisk in powdered sugar until desired consistency.
Stir in chopped nuts into the frosting if using.
Once the cake is baked and cooled slightly, pour the frosting over the top.
Allow the cake to cool completely before cutting into squares.
Notes
Store leftover cake in an airtight container at room temperature for up to three days.
