Instructions
In a large skillet over medium heat, add the ground beef. Cook for about 5 minutes until browned, breaking it apart with a wooden spoon.
Add the chopped onion and minced garlic. Sauté for an additional 3 to 4 minutes until the onion is translucent.
Sprinkle in the chili powder, cumin, paprika, salt, and pepper. Stir well and cook for another 2 to 3 minutes, then remove from heat.
Preheat your oven to 350°F (175°C). Lightly warm the corn tortillas in a separate skillet for about 30 seconds on each side.
In a baking dish, pour a thin layer of enchilada sauce to coat the bottom.
Take a warmed tortilla, place a spoonful of the beef mixture in the center, roll tightly, and place seam-side down in the baking dish. Repeat with remaining tortillas.
Pour the remaining enchilada sauce over the top and sprinkle shredded cheese evenly.
Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
Let cool for a few minutes, garnish with cilantro, and serve with sour cream.
