Instructions
 

  • 1. Cook the spaghetti according to package instructions. Salt the water for added flavor. Drain and set aside.
  • 2. In a large skillet, heat olive oil over medium heat. Add diced onions and cook until translucent, about 3-4 minutes.
  • 3. Stir in minced garlic and cook for another 30 seconds until fragrant.
  • 4. Add ground beef, breaking it up as it cooks. Brown evenly for about 5-7 minutes.
  • 5. Sprinkle taco seasoning over the beef and stir to combine.
  • 6. Pour in diced tomatoes, beef broth, black beans, and corn. Stir well and let simmer for about 5 minutes.
  • 7. Fold in cooked spaghetti, mixing gently until coated. Heat through for another 2-3 minutes.
  • 8. Sprinkle shredded cheese on top, cover, and let sit until melted and bubbly.
  • 9. Garnish with chopped cilantro and serve immediately with sour cream and avocado slices if desired.
