Instructions
Preheat your oven to 425°F (220°C).
Wash and dry the sweet potatoes, then cut them into 1-inch cubes.
In a large mixing bowl, combine the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Toss until evenly coated.
Spread the sweet potatoes on a baking sheet lined with parchment paper and roast for 25-30 minutes, flipping halfway through.
While the sweet potatoes are roasting, drain and rinse the chickpeas, then pat them dry.
In a bowl, mix the chickpeas with the remaining tablespoon of olive oil, ground cumin, smoked paprika, salt, and pepper.
Add the seasoned chickpeas to the baking sheet after the sweet potatoes have roasted for about 15 minutes.
While roasting, prepare the tahini sauce by whisking together tahini, lemon juice, and a splash of water.
Once done, drizzle the tahini sauce over the roasted sweet potatoes and chickpeas.
Garnish with freshly chopped parsley or cilantro and optional red pepper flakes.
