Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Wash and dry the sweet potatoes, then cut them into 1-inch cubes.
  • In a large mixing bowl, combine the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Toss until evenly coated.
  • Spread the sweet potatoes on a baking sheet lined with parchment paper and roast for 25-30 minutes, flipping halfway through.
  • While the sweet potatoes are roasting, drain and rinse the chickpeas, then pat them dry.
  • In a bowl, mix the chickpeas with the remaining tablespoon of olive oil, ground cumin, smoked paprika, salt, and pepper.
  • Add the seasoned chickpeas to the baking sheet after the sweet potatoes have roasted for about 15 minutes.
  • While roasting, prepare the tahini sauce by whisking together tahini, lemon juice, and a splash of water.
  • Once done, drizzle the tahini sauce over the roasted sweet potatoes and chickpeas.
  • Garnish with freshly chopped parsley or cilantro and optional red pepper flakes.
