Instructions
 

  • 1. Prepare the cabbage by removing the core and separating the leaves. Blanch in boiling water for 2-3 minutes until pliable. Drain and set aside.
  • 2. In a large pot, heat olive oil over medium heat. Sauté onions for about 5 minutes until translucent.
  • 3. Stir in minced garlic and cook for an additional minute until fragrant.
  • 4. Add ground beef or turkey, cooking until browned, about 5-7 minutes. Season with salt and pepper.
  • 5. Stir in uncooked rice, diced tomatoes, tomato paste, broth, oregano, thyme, and paprika. Mix well.
  • 6. Fold in the blanched cabbage leaves, stirring gently to combine.
  • 7. Bring to a boil, then reduce heat to low and cover. Simmer for 30-40 minutes until rice is tender.
  • 8. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

This soup can be stored in the refrigerator for up to three days and freezes well for up to three months.
