Instructions
Prepare the filling: Wash strawberries, remove tops, and dice. In a mixing bowl, combine cream cheese, sugar, vanilla, and cinnamon. Blend until smooth, then fold in strawberries.
Assemble the eggrolls: Lay an eggroll wrapper with a corner pointing toward you. Spoon 2 tablespoons of filling onto the center. Fold the bottom corner over the filling, then fold in the sides, and roll away from you, sealing with water.
Heat the oil: In a deep frying pan, pour enough oil to cover the eggrolls halfway. Heat to 350°F.
