Instructions
In a mixing bowl, combine cream cheese, powdered sugar, vanilla extract, and lemon juice. Blend until smooth and creamy. Fold in chopped strawberries.
Lay a tortilla on a flat surface. Spoon 2-3 tablespoons of filling into the center. Fold sides inward and roll up tightly.
Preheat the air fryer to 350°F (175°C) for about 5 minutes.
Lightly spray each chimichanga with cooking spray and sprinkle with cinnamon sugar.
Place chimichangas in the air fryer basket in a single layer. Cook for 8-10 minutes, flipping halfway through.
Remove from air fryer, allow to cool slightly, dust with powdered sugar, and drizzle with chocolate sauce if desired. Serve warm.
