Instructions
Rinse the dried pinto beans under cold water and sort through them to remove any debris or damaged beans.
Add the rinsed beans to the Crock Pot and pour in the 6 cups of water or vegetable broth.
Add the diced onion and minced garlic to the pot.
Sprinkle in the cumin, chili powder, smoked paprika, and add the bay leaf. If using, add the chopped jalapeño.
Stir gently to combine all ingredients.
Cover the Crock Pot and cook on low for 6 to 8 hours.
Check the beans for doneness; they should be soft and creamy. If not, continue cooking and check every 30 minutes.
Once cooked, remove the bay leaf and season with salt and black pepper to taste.
Serve warm and enjoy!
Notes
Consider adding lime juice or vinegar at the end for brightness. Fresh herbs like cilantro can enhance flavor.
