Ingredients
  

Beans

  • 2 cups dried pinto beans Rinsed and sorted

Liquid

  • 6 cups water or vegetable broth Vegetable broth adds more flavor

Aromatics

  • 1 medium onion Diced
  • 3 cloves garlic Minced

Spices

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 leaf bay leaf

Seasonings

  • salt To taste
  • black pepper To taste

Optional

  • 1 jalapeño Chopped, seeds removed

Instructions
 

  • Rinse the dried pinto beans under cold water and sort through them to remove any debris or damaged beans.
  • Add the rinsed beans to the Crock Pot and pour in the 6 cups of water or vegetable broth.
  • Add the diced onion and minced garlic to the pot.
  • Sprinkle in the cumin, chili powder, smoked paprika, and add the bay leaf. If using, add the chopped jalapeño.
  • Stir gently to combine all ingredients.
  • Cover the Crock Pot and cook on low for 6 to 8 hours.
  • Check the beans for doneness; they should be soft and creamy. If not, continue cooking and check every 30 minutes.
  • Once cooked, remove the bay leaf and season with salt and black pepper to taste.
  • Serve warm and enjoy!

Notes

Consider adding lime juice or vinegar at the end for brightness. Fresh herbs like cilantro can enhance flavor.
