Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Melt butter, stir in sugar, cocoa powder, salt, and vanilla.
- Whisk in eggs one at a time.
- Gently mix in flour.
- Bake for 20-25 minutes, cool completely.
- Make coffee syrup by dissolving sugar in hot coffee.
- Beat mascarpone cheese until smooth.
- Whip heavy cream with powdered sugar and vanilla.
- Fold whipped cream into mascarpone.
- Poke holes in cooled brownies, soak with coffee syrup.
- Spread mascarpone cream over brownies.
- Chill for 2-3 hours or overnight.
- Dust with cocoa powder before serving.
Notes
Use stronger coffee or add coffee liqueur for a more intense coffee flavour. Add chocolate shavings or a chocolate swirl for a mocha twist. Include toasted hazelnuts for crunch. Add citrus zest for brightness. Drizzle with caramel sauce for extra indulgence. Serve with ice cream, whipped cream, or on a dessert board. Substitute gluten-free flour for a gluten-free version.
