For the Luscious Red Velvet Cookies:

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup (1 stick) unsalted butter, softened
  • 2 large fresh eggs
  • 1 cup buttermilk
  • ¼ cup vegetable oil
  • 1 tbsp unsweetened cocoa powder
  • 1 tsp pure vanilla extract
  • 1 tsp red food coloring gel
  • 1 tsp white vinegar

For the Tangy Cream Cheese Swirl:

  • 4 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large fresh egg yolk
  • ½ tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together sugar and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. In a separate small bowl, whisk together buttermilk, vegetable oil, cocoa powder, vanilla extract, red food coloring, and white vinegar.
  6. Gradually add the wet ingredients to the butter mixture, alternating with the dry ingredients, mixing until just combined.
  7. In a separate small bowl, beat together cream cheese, sugar, egg yolk, and vanilla extract until smooth.
  8. Drop rounded tablespoons of red velvet cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Pipe or spoon a small dollop of cream cheese swirl onto each cookie, using a toothpick to gently swirl it in.
  10. Bake for 10-12 minutes, or until the edges are set. Let cool on the baking sheets before transferring to a wire rack.

Notes

For an extra indulgent touch, add mini chocolate chips to the dough before baking. Store cookies in an airtight container for up to 4 days.
