  • 1.4 lbs Boneless, Skinless Chicken Breast
  • 1 large Red Onion
  • 5 cloves Garlic
  • 1 ½ teaspoons Italian Seasoning
  • ½ teaspoon Dried Thyme
  • ¼ teaspoon Red Pepper Flakes
  • 30 oz Canned Tomato Puree
  • 2 ¾ cups Chicken Broth
  • 1 lb Rigatoni Pasta or Ziti
  • 2 ¼ cups Shredded Mozzarella Cheese
  • ¾ cup Grated Parmesan Cheese
  • Fresh Basil

Instructions

  1. Brown chicken in olive oil.
  2. Add onion and garlic, sauté until softened.
  3. Stir in Italian seasoning, thyme, red pepper flakes, tomato puree, and chicken broth. Season with salt and pepper.
  4. Add pasta, simmer until cooked and sauce thickens.
  5. Stir in half of the mozzarella and Parmesan cheese.
  6. Top with remaining cheese, broil until melted and golden brown.
  7. Garnish with basil and serve.

Notes

Add breadcrumbs, roasted red peppers, ricotta cheese, Calabrian chili paste, or Tuscan seasoning for variations. Use pre-cooked chicken for convenience.
