- 2 tablespoons Extra Virgin Olive Oil
- 1.4 lbs Boneless, Skinless Chicken Breast
- 1 large Red Onion
- 5 cloves Garlic
- 1 ½ teaspoons Italian Seasoning
- ½ teaspoon Dried Thyme
- ¼ teaspoon Red Pepper Flakes
- 30 oz Canned Tomato Puree
- 2 ¾ cups Chicken Broth
- 1 lb Rigatoni Pasta or Ziti
- 2 ¼ cups Shredded Mozzarella Cheese
- ¾ cup Grated Parmesan Cheese
- Fresh Basil
Instructions
- Brown chicken in olive oil.
- Add onion and garlic, sauté until softened.
- Stir in Italian seasoning, thyme, red pepper flakes, tomato puree, and chicken broth. Season with salt and pepper.
- Add pasta, simmer until cooked and sauce thickens.
- Stir in half of the mozzarella and Parmesan cheese.
- Top with remaining cheese, broil until melted and golden brown.
- Garnish with basil and serve.
Notes
Add breadcrumbs, roasted red peppers, ricotta cheese, Calabrian chili paste, or Tuscan seasoning for variations. Use pre-cooked chicken for convenience.
