For the Chicken:
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper, freshly ground
- 1 cup low-sodium chicken broth
For the Buttered Noodles:
- 1 lb egg noodles, wide or medium
- ½ cup (1 stick) unsalted butter, cut into cubes
- ¼ cup fresh parsley, chopped (optional, for garnish)
- Salt and black pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces in a single layer and season with garlic powder, onion powder, salt, and black pepper.
- Cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked and lightly browned.
- Pour in the chicken broth, bring to a simmer, and cook for another 2-3 minutes until slightly reduced. Remove chicken from the skillet and set aside.
- Meanwhile, cook egg noodles according to package directions in a large pot of salted boiling water until al dente. Drain well and return to the pot.
- Add cubed butter to the hot noodles and toss until melted and evenly coated.
- Season buttered noodles with salt and black pepper to taste.
- Add the cooked chicken and its sauce to the buttered noodles, tossing gently to combine.
- Garnish with fresh parsley if desired and serve immediately. Enjoy!
Notes
For a richer version, stir in ½ cup grated Parmesan cheese or a splash of heavy cream before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
