- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Red food coloring (gel or liquid)
- Green food coloring (gel or liquid)
- Christmas sprinkles or sanding sugar (optional)
Instructions
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Gradually mix in the dry ingredients until dough forms.
- Divide dough in half; tint one half red and the other green.
- Wrap each dough separately in plastic wrap and refrigerate for 2-3 hours.
- Roll each dough into a 9×12 inch rectangle on a floured surface.
- Layer one dough over the other and roll tightly into a log.
- Wrap dough log in plastic wrap and chill for 1-2 hours.
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- Slice dough log into ¼-inch rounds and place on baking sheets.
- Bake for 8-10 minutes or until edges are lightly golden.
- Cool cookies on a wire rack before decorating with sprinkles (if using).
Notes
For a twist, try adding peppermint extract to the dough for a holiday-inspired flavor. Store cookies in an airtight container at room temperature for up to 7 days.
